A latent heat storage system includes a vessel (10) which encloses a volume (12) filled with a latent heat storage medium (14). A circulated heat transfer fluid, which is both immiscible with and has a considerably lower density than the latent heat storage medium flows through and in direct contact with the medium. In all of the elements (16,22,24,26,28) of the external section of the heat transfer fluid circuit (20), the flow conditions and geometry of the containing surfaces are such that particles of the latent heat storage medium which separate out of the heat transfer fluid in the circuit are conveyed back to the vessel (10).
